Salted Caramel Brownie Balls

INGREDIENTS:

1 cup (uncooked) oatmeal (I used quick cook oats as my kids like it better)

1/2 cup peanut butter

1/2 cup ground flax seed

1/3 cup honey or agave

1/4 cup raw cocoa powder

1 tablespoon chia seeds (optional)

1 teaspoon vanilla extract, store-bought or Vanilla pod

DIRECTIONS:

 

  • Whack all ingredients together in a medium bowl until thoroughly mixed. Cover and chill in the refrigerator for about 30 mins, to make the mix easy to give shape to.
  • Once cooled, roll into balls (mine are usually 1″ in diameter.) Store in an airtight container or mason jar and keep refrigerated for up to 1 week ( if you are in a cooler country it can stay out 🙂
  • Makes about 20-25 balls.

**Tip : If the mix seems to dry, adding a bit of honey or peanut butter will give you the right texture.  If the mix seems too wet then add a bit of oatmeal.
