Zucchini Chocolate Cake


I know it sounds absolutely bonkers but you are reading correctly…This is a decadent chocolate cake but is full of goodness and is gluten free 🙂 My almost 6 year old and 2 year old walloped it and asked for seconds and I was more than happy to give them a second piece.

So here it is…


1 Cup Unsalted Almond Butter

1 1/2 Cups of Finely Shredded Zucchini

1/3 Cup Honey Or Sweetener of your choice (I prefer honey as its just a healthier option)

1/4 Cup of Raw Cacao Powder

1 Egg

1/4 Tsp Salt

1 Tsp Baking Soda

1 Tsp Vanilla Extract

1 Cup Chocolate Chips (Dark and Milk mix is what I use)


Preheat the oven to 350F.

Grease a small baking pan (under 8*8)

Mix the almond butter, egg, honey and vanilla

Add the raw cacao powder, baking powder and salt and give it a good mix.

Toss the Zucchini into this mixture and combine well.

Add half the chocolate chips in the batter and use the other half to sprinkle on top.

Transfer the batter into the greased baking pan and top with remaining chocolate chips.

Bake for upto 40 minutes depending how deep your baking dish is…
